Happy New Year!

Over the last week and a half we have been enjoying a break from school. A chance to play more, get some projects done, and get re-organized for school starting back up next week! Tonight the fun continues as we are getting together with family and friends to celebrate and bring in the new year.

One of the traditions that I grew up with and that we carry on, is enjoying an array of tasty appetizers all night. Tonight I will be making a "7 Layer Tex Mex Dip" that I came across here! This 7 layer dip is so tasty! I have made it several times over the last year and it is always a hit, especially with my husband. I hope you all have a wonderful new year!

7 Layer Tex Mex Dip

3 avocados, mashed
3 tomatoes, chopped
1 bunch green onions, sliced
1 small can chopped olives
1 package taco seasoning
1, 16 oz can refried beans
8 oz. cheddar cheese, shredded
1 cup sour cream
1/2 cup mayonnaise
2 Tbsp. fresh lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1-2 bags tortilla chips

In a bowl, mix avocado with lemon juice, salt, and pepper. In a separate bowl combine sour cream, mayonnaise, and taco seasoning.

On a medium-sized platter, spread beans in an even layer with a knife. Follow with the avocado mixture. Use a knife or back of a spoon to achieve a nice smooth layer. Next, add the sour cream mixture and spread evenly. Finally follow with tomatoes, olives, green onion, and cheese.
