Our New Cooking Adventure

Over the last month it has been very quiet over here at "Joy In Every Step". I apologize for my absence. My time has been filled with relearning how to cook.

It all started with my middle daughter, Miriam. She has always had intestinal problems. This last year we pulled her off dairy. This seemed to help but she was still having some problems. Fast forward to about a month ago when we decided it was time to have her tested for food allergies.

From these tests we found that she is allergic to wheat gluten, eggs, and slightly to dairy and a few other random items. When we took her off these three things it made a huge difference for her. Because of the great results we also decided to have my husband tested and today we found out that he is allergic to eggs, dairy and a few other random items.

All this to say that we are on a new adventure to find dishes that suit everyone's dietary needs. It has required a lot of research on my part, trying new dishes, learning gluten free baking and more. This has required a lot more prep time and work in the kitchen. There are many things that I CAN make, but the big question is, WILL everyone eat it???

I hope to be back to posting soon. It just might take a little bit of time until I get a handle on this new way of cooking and have the time to post. I am trusting the Lord to help us through this time of adjustment! I am very thankful for those who have gone before us and paved the road making it easier for us newbies! I would love to hear from any of you who have experience with similar food allergies: blogs you follow, recipes you enjoy, anything!!!

My Cora is allergic to eggs, dairy, and peanuts. We cut it all out completely for a year. Then we started adding eggs and dairy baked in to things. She seemed to be doing ok with that. Now her skin has really flared up again in this past week. I am wondering if seasonal allergies could be causing that?
Anyway, I am really considering the GAPS diet. It heals the gut, which is where the important immune system is located. It would be a huge undertaking but may be worth it if it could cure her allergies. Have you heard of this? Google it and you will find lots of info. Let me know what you think.

Anna, I'm sorry for your sweet little one, but she is so blessed to have a mommy who cares so much about cooking her healthy and yummy meals! =) I will pray for you as you learn this new way of cooking! *Hugs*

Get Theresa Kingma's book - Dairy Free, Egg Free Kid Pleasing Recipes and Tips. We do wheat/gluten but not dairy, eggs or nuts.

I recommend the Whole Foods Allergy cookbook and the Food Allergy Baking Mama. They aren't gluten free but I think you can modify them to be gluten free. My daughter is allergic to dairy, egg, nuts (including peanut) and sesame seeds. It is definitely not a cut and dry path to navigate. I think one of the biggest things I've learned is that you have to look at the blood test results and skin test results together. We initially had a blood test done on my daughter which excluded lots of stuff from her diet (per the pediatrician). When we finally went to see a very good allergist we realized that she didn't necessarily have to be taken off everything.
Do you have a Whole Foods by you? I don't know what I would do without that store!
Best of luck in your journey. There is a lot of trial and error. But at least there is a lot of information out there now.
